2 Acorn Squash
1 14oz can Coconut Milk
Red Thai Curry Paste
water
Step 1: Cut two acorn squash in half, roast at 375 for 1 hour.
Step 2: Remove greasy grimy gofer guts from inside of squash.
Step 4: Because Mom is not there, go ahead and puree that puppy right in the pot! Adding enough water to avoid explosions.

Step 6: Realize said yogurt container is too small so grab a second. Fill and pat yourself on the back for meal planning ahead for the next week.

Step 7: Make sure no one is looking and try some straight from the pot-- it's really that tasty!

Looks great- not familiar with red thai paste - How much??? Glad the hand held blender is holding up to
all kinds of things. How about Butternut squash instead
of acorn? You go girl. Cutting acorn squash requires
ingenuity.......Very large knife - and - do you have a hammer? Or, poke a few knife holes in the squash to
center and roast it whole. When baked it's easy to
cut in half and then scoop out the seeds.

The red thai paste is about 3 tsp and I'm not sure about butternut squash-- I imagine it would taste similar. Good idea with the holes, i'll have to try that.
